"Built as a two-storey house in 1688, the edifice was converted in 1754 into North America's first inn, which, 15 years later, was granted the first liquor licence under British rule. […] Today, the auberge is owned by Marc Bolay and Quebecois rocker/ restaurateur Garou, who run it solely as a restaurant [...] an appetizer consisting of croquettes of deep-fried pig's feet meat with jumbo shrimp stole the show. Paired with al-dente asparagus spears and shaved raw asparagus salad, the pig meat was moist on the inside and crisp on the outside.
